Butchering a hog
20 days ago we butchered our first pig. It was a lot to learn for the first time but well worth it. We have a freezer full of pork now and the family learned a lot during the process. Here are the rest of the pictures from that day and when we first got the hog for breeding.
The White one is Max the hog that we got from my friends brother. The black one is Ruby our sow that we've had since she was about 8 weeks old.
My poor little girl after she slipped and fell in the pig poop twice.
Ducks and goats roaming and hanging out with the pigs.
Warning! Ready for processing. The rest of the images will be quite graphic. Please only continue if you are ready to see the finer details of a pig being butchered.
Hanging and skinning.
Liver that will be eaten as we work.
Cutting in half with a long bladed Sawzall
Transport to the air conditioned garage
Separating sausage, ham , bacon and loins
The kids did great
Ribs. Careful now :)

Delicious fresh hart and liver cooked by this young gentleman
We will have enough pork for the next 6 months at least. It was a lot of work all together but I like to know where my food comes from.
Here is the pulled pork and rice from the next day.
My next post will be about the piglets we had last Saturday morning at 2 am. stay tuned for lots of cute pictures. :)
I am also running a Steem witness node. Please vote @camb for witness https://steemit.com/~witnesses
Wow, great documentation and those piglets look excellent.
Thank you! Our Sow was black. I thought that was pretty cool looking so I'm a bit confused why none of our piglets turned out like that. I see yours are mostly full black.
