Two weeks ago, Breakfast Chocolates appeared on our family's table, with two great recipes: Raw Chocolate Cream and Raw Chocolate Truffles. Today's fudgeballs are similar, except that they're more rich and decadent, designed as an after-dinner dessert.

Give the kids some extra motivation to eat their greens with these bite-sized fudgeballs!

Superfoods like cashews, raw cacao, and coconut ensure that our raw desserts our nourishing, as well as satisfying.

Delicious and Nutritious

Our goal is to provide some form of nutritional value anytime we're offering our kids a treat. Candy, cookies, and other packaged desserts are not desirable options for our family, because the temporary sugar buzz is often met with spastic energy, followed by a wobble and crash. And then the kids want more! There's no real reward in this. Packaged cereal is the worst, because the kids eat and eat until their bellies are full, and five minutes later they're hungry again. We can't send our kids off to school this way, and we can't send them to bed this way. We want them to feel nourished.

At the moment, we are still embracing agave nectar and other sweeteners of this nature. We all have an appreciation for the sweet side of life, after all. For the fudgeballs you see here, we chose coconut nectar for our binding agent, because it sweetens while also enhancing the coconut flavor. Since these are designed for desserts, we're using more sweetener than usual. As with any recipe of ours, we recommend adjusting the ingredients to fit your taste preferences. Because these fudgeballs are raw, and packed with superfoods, they're very potent. Two or three fudgeballs will be more than enough for any of our kids.

The Recipe

Ingredients

  • 1 C cashews
  • 1 C coconut flakes
  • 1/4 C cacao
  • 1/4 C coconut nectar

Instructions

  • Mix dry ingredients in a food processor.
  • Add coconut nectar. Blend to a texture similar to cookie dough.
  • Adjust ingredients based on your taste preferences.
  • Roll bite-sized fudgeballs, or flatten into cookie shapes.
  • Refrigerate for 1 hour.

Sounds easy enough

Super easy, as long as you have the right equipment. We rely on our food processor on a daily basis, for raw food prep. Ours is an affordable, simple machine that works well.

So yummy. Yes, and there are countless variations. We like the texture of cashews, but almonds (soaked) might be superior in taste. Just like smoothies, you can make them your own.

these look great! also a wonderful way to sneak in spirulina or chlorella or even chlorophyll

Oh fo sho! Yeah, this is a great suggestion. Our family loves to include spirulina especially, although the green color is an instant turnoff to the kids, unfortunately. So far, we have better luck with elixirs and smoothies, as far as the greens go with our kids.
