Coconut biscuits with chocolate
Just a wonderful cookie. The recipe does not have flour at all. Only
coconut chips, egg whites, sugar and a little jam. I really like white
chocolate, but the dark one also looks nice.
200 g of sugar
200 g of coconut chips
20 g of raspberry jam
3 egg whites
60 g of white chocolate
Beat the room temperature proteins in a strong foam, gradually add
sugar until you get a shiny light weight. Add the coconut shavings and
jam.
Put the mixture in a confectionery bag with an asterisk. Dispense
small circles at the baking tray lined with baking paper (parchment).
If there is no bag, just spread it with a spoon.
Preheat the oven to 180 C. The oven in the preheated oven is 15
minutes. Lightly cool and remove from the baking tray.
While the cookies get cold, melt the chocolate in a water bath. Dip
the fork in the melted chocolate and pour the biscuits. Put it in the
fridge for the chocolate to freeze.
