Yam porridge with a dash of bitterleaf
Well, first off, I'd like to say I don't know if this recipe is standardized or call myself a culinary expert, but, I love good food and I love making them.
I have weird cravings, sometimes, I taste hotdog in my mouth at 11pm or fruit punch around 5am. I don't get to satisfy my craving every time it comes but I do my best when I can.
I wanted something interesting with a dash of medicine so I opted for this Yam porridge with a dash of bitterleaf.
Ingredients
- Yam
- Fresh pepper
- Onions
- Stock fish
- Palm oil
- Bitterleaf
- Seasoning
How to
First, I peeled my yam and cut into cubes.
Then I washed out my bitterleaf
I set my stock fish to boil with a little chicken stock.
I added the yam cubes when the fish was tender.
Added the seasoning, the diced onions, the pepper puree.
After 10 mins, I added the bitterleaf.
Then finally, the palm oil (optional)
Food is served, let's eat.
So, I made this for breakfast.
Just before I go, you may ask, Why bitterleaf?
I could use Pumpkin (Telfairia occidentalis) as I have before, or even scent leaf or a combination of all, but I had to make do with the available, bitterleaf.
