Finnish creamy fish soup "Lohikeitto"

Hello!

Today I'll tell you about a great dish of Finnish cuisine — "cream" or "milk" fish soup.

Cooking time: 45 min.
Number of servings: 4

Ingredients:

  • Salmon, 500 gr.
  • Cream, 20%, 200 ml
  • Milk, 300 ml
  • Potatoes, 2-3 PCs.
  • Onion, 1 PC.
  • Carrots, 1 PC.
  • Butter, 10 gr.
  • Bay leaf, 1 PC.
  • Black pepper, salt

Butchering the fish. Cut the fillet into cubes, put the skin and bones aside.

Pour 1.5 liters of water into a pan, put the bones and skin, bring to a boil, remove the foam. Add the peeled, randomly cut onion, salt and cook on low heat for 20 minutes. Filter, remove the onion and bones.

Peel and cut the carrots and potatoes.

Put the vegetables in the fish broth, bring to a boil and cook for 15 minutes.

Take out 1/4 of the potatoes and make a mashed potatoes with butter.

Add mashed potatoes, milk and cream to the broth (if the cream is less than 20% fat, add a pinch of flour and steer thoroughly), salt and pepper to taste.

Bring to a boil, add the fish, bay leaf, reduce the heat to a minimum, cook for five minutes and remove from the heat.

Serve with dill or thyme.
