Have you heard of coffee flour....something the founder of one of the very large coffee brands has invested in, in a big way.

I hadn't heard of coffee flour, but I looked it up, and wow! I will definitely be giving that ingredient a try! I love it when people figure out ways to use that which is typically thrown away, so cool! Coffee flour would be a nice addition to the mug recipe, it's prettily easily tweaked to fit one's ingredient availability.
