Fried Scallion Pancake
I love the fried scallion pancake, so today I will share with you the delicious pancake, it is easy to do as long as you knead a good dough. The dough is very important to the scallion pancake.
So how to make it soft?
I think there are two key point in it. one is hot water (55-75°C), the other is that let the dough have a rest for at least one hour. Do it like this, I can assure you that your pancake is soft and delicious. As for the ingredients such as green onion and oil ,you can replace them with pepper, nut and whatever you like.

Ingredients:
flour 500g, warm water(55-75°C) 260g, salt 5g, peanut oil 30g, green onion 50g
Method:
Take a large bowl, add the flour and salt to the bowl, and then add the warm water to the flour slowly and stir it using a pair of chopsticks or a spoon until the flour become cotton-shaped. then using your fingtips to knead it until it became four smooth doughs. Let them have a rest for one hour. The dough more long , more soft.
take the good dough and roll it out using a rolling pin, form a thin round piece. Sprinkle some green onion and oil, roll it from the bottom to top, form a long strip and roll it again from left to right.
press it down to flatten. and roll it .
heat a non-stick frying pan, put the pancake in the pan, fry it for about 3-4 minutes until both sides is golden.
the delicious scallion pancake is done. serve with warm.
