Spicy Catfish & Mango Thai Salad.
Yam Pla Duk Fuu is a particularly delicious Thai salad made from deep-fried flaked catfish meat and served with a dressing of thinly-sliced pieces of unripe mango, chunks of onion, shallots, chilli, lime juice, garlic, cashews, sugar and fish sauce.
The shaved catfish is delightfully fried and crispy, and the salad on the top should be full of flavour. The green mango gives it a sharp bite, the chillies some sting and the fish sauce and rest of the ingredients add to the taste sensation. Its a strange mix but it comes together perfectly.
