How to make your own DELICIOUS and easy Belgian fries!
now there is a lot of controversy on whether fries originate from Belgium or from France (therefore the name French fries). This is a discussion that I will not go in further on this post, but I will show you have to make some really delicious fries as we do here in Belgium :-)
But to know that I live in a city of not even 40 km and we have more than 14 deep frying snackbars with mainly fries served , I guess you can say it is very wanted in Belgium. ( not to mention that some deep frying snackbars have people waiting in line before they even open!)
Preparations
Now to commence, you start out by buying some potatoes ( preferably organic, doesn't change but the chemicals :-))
but do look for big and mealy potatoes, choose some big one's out and start peeling them.
After peeling the potatoes, u need to cut them twice in the length so u keep them long and fine. Wash them a bit and afterwards make sure u take a towel and wrap them in the towel and dry them very good. U certainly don't want to have water getting in your deep fryer , trust me on this :-).
Frying
Now take your deep fryer and put it on, let it get to temperature wich u can usely see when it's ready when the light goes out. U pre-fry the potatoes on 170° celsius and u let them get cooked-through on the inside but not letting them bronze on the outside.
U will notice when the fries are cooked-through on the inside when you can hear them sissling when u have taken them out of the oil or when u see a sort of glassy tinture on the outside of your fries. U can even try them by bending the frie, if it breaks it's cooked-through on the inside.
This proces can take about 5-7 minutes, it actually more depends on how big you have cut your fries. When you have pre-fryed the fries u have to get the grease of them. Let them cool of afterwards.
Now to finish the fries u heat up your deep fryer to 190° celsius and u let then get bronze on the outside, get the grease of them again and ready u are.
very good with a steak and salad or just plain fries with mayonaise.
