Homemade praline
Ingredients (for about 300g)
- 200g of hazelnuts
- 125g of sugar
- 20g of water
Preparation
- Roast hazelnuts in the oven at 170 ° C for 10 minutes.
- In a saucepan, bring the water and sugar to a boil.
- When the temperature reaches 121 ° C (thick syrup), add the hazelnuts and mix (the sugar will recrystallize).
- Continue stirring over low heat until all the sugar is caramelized.
- Pour on a baking sheet lined with parchment paper and allow to cool.
- Put the cold caramelized hazelnuts in the mixer bowl and grind: you get first a powder and then a paste.
- Put the dough in a clean container like jam jar and keep in a cool place.
Note: instead of hazelnuts, you can use almonds or a mixture 50/50 almonds / hazelnuts
