On the Road with The Birds! Cocoa Mint Figgy Tarts and Bird Watching @Mountainjewel
How do Bird watching and Figs go together?
Well, when I last shared about my visit to @mountainjewel I mentioned they purchased new chickens for their homestead. It was such a fun day and experience! We spent a little time birdwatching when they were safely stationed in their new quarters.
One brave soul!
Took them a while before they were comfortable about leaving their carrier! Resident rooster came to call!
Pretty soon they were busily surveying their new area, they loved the natural foliage. Their previous home was just bare soil! After birdwatching and showering, I decided to make a special surprise!
Today I wanted to share the sweet Chocolate Figgy dessert I made to leave with @mountainjewel. She is a true chocolate lover as well, and I wanted to incorporate something from their garden before I left. I had all of the ingredients to make a wonderful chocolate dessert but needed a little something, something!
- I found several beautiful mint plants growing in their garden. I knew it would be perfect!
Ingredients
Serves 6
Crust
- 6 Organic Figs
- 1 cup raw almonds (soaked overnight and drained)
- dash of sea salt
Filling
- 2 cups cashews (soaked overnight and drained)
- 1/4 cup organic cocoa
- 4 tablespoons Organic Maple syrup
- Fresh Mint leaves
- Almond Milk (as needed)
- Fresh Raspberries
Assembly
- Pulse almonds in blender until coarsely chopped.
- Add figs and sea salt and blend until smooth
- Press firmly into tart dish.
Blend cashews until smooth. You can add a dash of almond milk if you think it is too thick. Add Maple syrup and cocoa, blend again. Then add the mint leaves and blend. You can smell the mint!
Pour over the crust. So creamy and luscious! Now, into the freezer overnight!
We were leaving the next day. @mountainjewel wasn’t aware I had prepared this little goodie for them. I love surprising them. (Remember all of those travel goodies I made….well needless to say, they approved! We didn’t have much left to take to the mom-to-be!
Add a few raspberries, leave it out for about 30 minutes, and then enjoy! (I just took this out of the freezer)
Oh and by the way....the new chickens left a great send off gift!
