Biltong or beef jerkey

There was a request for a Biltong recipe from someone, and I really wish I could remember who.  They were processing meat with salt and I said that we have biltong here in South Africa. So today I am going to skip Da Vinci and post a biltong recipe.

Recipe for making biltong

1. Cut the meat into 4 cm thick slices

2. 250 mg of vinegar for basting

3 . ½ cup of ground coriander

4. 2 tablespoons of ground black pepper

5. 2 tablespoons of seasalt

6.  2 teaspoons of paprika

Put your raw meat in a dish and marinade for 2 - 4 hours in the fridge

Remove, put hooks in and hang somewhere safe.

Hang till dry in a warm area, or in an enclosed area, so that nothing can get to it especially the kids LOL.

Dry up to the way you like it, some like it very dry others like it a bit wet, but totally delicious!

There are differnet ways of eating but preferably just in slices with some nice warm bread.

I've never had biltong. How does the taste compare to beef jerky.

They are similar in a way but I prefer biltong to jerky; i like the wetter biltong so I might be a bit biased. The main difference besides the smoking and spicing of jerky is that biltong is made from raw meat while jerky is cooked first. This allows for more flavour and a better texture imho.

I think for me it would probably be a mental thing with being wetter. In my mind I'd be worried it wasn't safe to eat but I know it is.

My son and I watch Duck Dynasty, and there was an episode about biltong. So we to try and make some. Thank you for posting.

I have also started to make my own biltong. Very satisfying and much much cheaper. Everybody says it is very nice............... Thank ou for sharing

I think my husband would love this! Thanks for the great recipe. It's great that these traditional methods of extending shelf life are still around---probably because, aside from being practical, they're delicious!
