What's for lunch? (#4)

We are cooking mostly veggies again this week and I wouldn't be surprised if by 2nd day, the kids are going to ask their daddy to get them something from McDonald's. Won't bother me a bit, so long as they finish the greens on their plate.

Oh wait, it isn't greenish for today - a little whiter actually. This whole work from home thing challenged me to learn other things too, like cooking. I know the kids have gone through a lot of breakfasts with burnt toasts, eggs and sausages, I can do better than that. Now, let's take my cooking to another level. A dish I love to eat but never dared to cook.

This is Ginataang Langka (Young Jackfruit in Coconut milk). Ginataan is Filipino term used for food cooked in Coconut milk. So, it can be used to term other dishes too, like Ginataang Hipon (Shrimp in Coconut Milk), Ginitaang Alimango (Crabs), etc., Dishes variety are just endless with this method.

You may or may not have meat for this - if you are Vegetarian. There were plenty of crabs at the wet market this morning so, instead of pork, I took a good 4 pieces of small sized crabs to join this dish.

Ingredients:
1 lb unripe jackfruit, chopped
4 small crabs cut in half.
2 cups coconut milk
4 pieces chili pepper, chopped (optional)
1 medium onion, sliced
1 teaspoon minced garlic
1 tablespoon fish sauce
¼ teaspoon ground black pepper
2 tablespoons cooking oil

Instructions
Steam crabs in a separate pot for 5-10 minutes. Set aside.
Sauté the onion and garlic. Add steamed crabs.
Pour the coconut milk in the pan. Let boil. Cover and simmer for 20 minutes. Add water if needed.
Add the ground black pepper, chili, and fish sauce. Stir.
Add the jackfruit. Stir and cook for 5 to 7 minutes.

I have yet to polish my photography skills. But this is how it turned out. And yes, the kids finished their meals.
