Baked chicken skewers with peanut sauce

INGREDIENTS
1 lb boneless chicken thighs, cut into 1-inch (2.5 cm) cubes
1 file
1/4 cup creamy peanut butter
2 tablespoons hoisin sauce
1 tablespoon fresh ginger, finely grated
1/4 cup hot water
salt and pepper

PREPARATION

  1. Season the chicken cubes with salt and pepper, then thread them onto metal or wooden skewers soaked in water. Place chicken skewers on lightly oiled foil-lined baking sheet. Bake under preheated broiler for 6 minutes or until chicken is no longer pink inside (turn brochettes halfway through cooking).

  2. Meanwhile, grate lime to 1 tsp (5 mL) zest and squeeze to 1 tbsp (15 mL) juice. In a small bowl, whisk together peanut butter, hoisin sauce, ginger, lime zest and juice, and water. Serve chicken brochettes with sauce.
