Mom's Potato Soup with Sausage

6 large Yukon Gold potatoes (cubed)
3 large Russet potatoes (cubed)
Milk*, enough to cover potatoes

1 lb. Bob Evans Original flavor sausage
2 Tbl dried onion
2 Tbl dried basil
2 Tbl garlic powder
Approx. ¼ cup cornstarch
Approx. ¼ cup all purpose flour

Feeds an army. Doesn't freeze well, so plan accordingly.


Wash potatoes. Peel if you choose. (I usually peel only the russets due to their tougher skin.) Cut into one inch cubes and put them in 5 qt. dutch oven, covering with water. When all are diced, drain water, rinse, drain again.

Add enough milk to cover the potatoes, plus another ½ inch besides. Simmer over medium heat, being careful not to scorch the milk. Stir occasionally. Potatoes should be barely tender and holding their shape. Do not overcook or you will have potato mush. Remove from heat if necessary.


In high-sided saute pan, brown the sausage and drain excess fat. Pieces should be bite size or smaller.

While the potatoes and sausage are cooking, mix together the dried onion, basil, and garlic powder. Set off to the side for the moment.

Turn off heat under sausage. Sprinkle cornstarch and flour over the sausage. Stir until meat absorbs powder. Repeat until the meat has a satiny look to it. Sprinkle in seasoning mixture. Stir evenly throughout meat mixture.

Gently stir meat mixture into the potatoes. Return heat to medium. Stir gently and continuously til the liquid thickens. Remove from heat and let stand for 10 minutes for flavors to blend. Salt / pepper to taste. Usually the sausage seasoning is fine for me. As with many soups, this one is better the second day when the flavors are married more completely.

Serve with your favorite crackers or a hearty slice of wheat bread. This is the ultimate in comfort food for those cold winter nights. Indulge!



Just a word about the milk I use - Fairlife. First off, it's pricey. The long shelf life offsets that for us due to the fact we only use milk in something like this, mashed potatoes, or on cereal. We don't have to throw spoiled milk away anymore. The lower sugar content is helpful for hubby's diabetes.

That said, regular milk works just fine with the recipe.

It was a bit of a Christmas splurge... not at all good for my low cholesterol crusade... but, it was Christmas, dammit! I'll have one more bowl, the rest is up to hubby. Hope he's hungry. LOL!

I bought some chorizo sausage to make a portuguese soup - my splurge.

Thanks! You can freeze it, but it seems to break the sauce. It'll taste fine. It'll just be 'soupier'. lol! I like this particular version very thick, so I don't freeze it. I'll just make hubby take the leftovers into to work. It'll disappear. ;-p
