Watermelon Rind Salad

Water melon is always good for summer, we're used to eating the red part of watermelon. How about the watermelon rind? Today I will share with you how to make watermelon rind salad.

Ingredients:

3 pounds thin slice watermelon rind
2 boneless, skinless chicken breast , cooked and shredded
2 cups grated carrots
½ cup peanut (option)
½ cup chops herb ( basil or pepper mint and cilantro)
1 tablespoon sugar
2 tablespoon vinegar (apple, rice or vegetable)
1 teaspoon salt

For the sauce:

1 teaspoon chopped fresh chili ( you can have more if you want spicy)
2 teaspoon chopped garlic gloves
2 tablespoon boiled water
2 tablespoon sugar
2 tablespoon fish sauce ( you can find at any store)

1 - In a large bowl combine watermelon rind and carrots with 1 tablespoon sugar, 2 tablespoon vinegar, and 1 teaspoon salt.

2 - Mix thoroughly and let stand for 20 minutes.

3 - Prepare sauce: whisk together sugar, vinegar and water. Add chili and garlic to taste.

4 - Squeeze the watermelon rind and carrot together in your hands and put in another large bowl and add chicken and herbs, then pour sauce on top of salad and gently toss to combine.

5 - Add peanuts on top of salad before serving.
