Easy & Healthy : Cocos Macaroons
I used to have this little tradition in Belgium where I'd go to the Christmas market and get myself a bunch of huge freshly made cocos macaroons. They were the best!!!!
Since they were only around for a couple of weeks and this sweet tooth started to miss them, it was about time to make my own! So here we go! It's super easy to make and they are glutenfree and diaryfree! Enjoy!
6 egg whites
1/3 cup agave or 1/2 cup honey
3 cups shredded coconut
1 tsp almond extract
Whisk egg whites until stiff. Fold in the agave, almond extract and coconut. Use 2 tablespoons to press the batter together and then slide it on the parchment paper. Bake for about 15min at 180°C . Enjoy!
