Eggplant tempura
1 eggplant
2 eggs
2-3 tbsp flour
vegetable oil (for frying)
dill (greens) to taste
salt to taste
Eggplant well washed.
Cut into slices and salt.In a bowl, whisk the eggs.Add a little salt and flour. Mix well the batter.Dip slices of eggplant in batter and fry in a pan with vegetable oil. Fry both sides Ready eggplant spread on a dish with lettuce leaves and sprinkle with finely chopped dill.Our delicious eggplant in batter ready. Umm...you Can bring to the table.
Fried eggplants are a staple of the tapas in Southern Spain :) However yours look like particularly well made and tasty
