From The Garden To The Kitchen- Mangia!

I’m still pretty good on the tomatoes I picked from my garden and canned last season so we’ve been enjoying some very nice marinara sauce with spaghetti quite often! I’m so glad it so far is looking like its going to be a good gardening season and we will be having a good tomato harvest! I woke up early this morning to rain falling and that made my heart giddy with the promise of a good season! (Plus my allergies have been horrible and the pollen needed some rain to settle.)

With the garden pregnant with herbs and vegetables we’ve been eating quite fresh lately! Ripe red roma tomatoes sliced and paired with burrata and freshly picked basil is drizzled with some nice olive oil and a sprinkling of Persian blue salt for a quick and delish Insalata Caprese!

I also like to brush some olive oil and crushed garlic on a slice of baguette, grill it and top with Caprese salad. Some good quality balsamic vinegar on top and you’ve got some quick bruschetta! Super easy and great when you have leftover Caprese, which rarely happens lol.

Aside from being grateful for a giving garden and filled tummies I am super glad something in my head clicked yesterday and I moved the chicken coop and run because the area they were in would have been a muddy chicken mess if I would have left them where I had them helping me compost. Love my family and my sweet pets!
