Scotch quail eggs...country style!

Im going to take you on a journey to flavor town! I LOVE making these! Its a boiled quail egg wrapped in a seasoned sausage, coated in bread crumbs and fried. All the textures combined make a heavenly meal or snack. This is my own recipe i created from traditional scotch eggs made with chicken eggs and hands down one of my favorite foods. Ill jump right in with the steps i take to make them! (Recipe at bottom of page)

Take a small amount (about 1.25 oz) of sausage and press into a disc. I use a sage sausage that i season up with my own spices.

Next, place a hard boiled egg in the middle and wrap it up! Roll it in your hand to make an even ball and make sure there are no gaps.

Once you have all your eggs wrapped in the sausage, roll them in flour, dip them in the egg wash, then into the bread crumbs. My secret is using equal portions of bread crumbs and saltine crackers!

Once you have them all coated. Put a few at a time into your oil. Make sure they are submerged evenly and turn often if needed.

Lastly is a bit of peppered gravy and you have one of the best things you will ever eat! They never last at home and they are perfect for a party or potluck! I hope you enjoy my recipe below, and be creative with your own scotch eggs!

Scotch Quail Eggs

12 quail eggs, hard boiled and peeled

Meat Wrapping
1 lb of sage breakfast sausage
1 tlbs Worcestershire sauce
1/2 tlbs dried onion
1 tsp garlic powder
1/2 tsp smoked paprika
1/2 teaspoon white pepper
Pinch of salt

Egg Wash
3 eggs
1/4 cup milk

Bread Coating
1/2 cup breadcrumbs
1/2 cup crushed saltine crackers
Flour (for dredging)

Heat oil in fryer or pan (enough to cover eggs completely) to 350°F. Mix ingredients for meat wrapping and set aside. Wisk together egg and milk, set aside. Combine breadcrumbs and crackers.
Wrap each egg in about 1.25 oz of sausage mixture, then roll in flour, then egg wash, and coat in breading mixture. Fry eggs in oil for 4-5 minutes, until crispy and golden brown. Allow to cool for 3-5 minutes before serving. Serve with your favorite gravy or bbq sauce.

Using quail egg for this recipe is flat out brilliant! The size is much more manageable and the egg doesn't get overwhelmed by the sausage. Well done!

Theyre great! I had scotch eggs while still living in colorado. We were gifted a pig that yielded us about 25 lbs if sausage and when i got my birds i thought it would be a great idea to use up extra eggs and sausage. I love them!
