Brazilian Stuffed Potato - FOOD PHOTO SHOOT
Stuffed potato is the family's favorite meal, I venture to say that it is the best of all my mother has ever taught me * - *
That's why when setting up a home-based meeting with friends, the most requested menu is the wonderful stuffed potato. I like to present you a worldwide recipe the origin is attributed to Turkey, but many say it originated in England. What we can say with certainty is that this dish, famous all over the world, has different name and recipe in each country. In Turkey the dish is known as Kumpir and in England is known as Baked Potato, but in some regions of the country, it is called Jacket Potato and finally here in Brazil, it is known as Stuffed Potato. you can do it in different ways with beef, lamb or chicken. I prefer chicken because it is lighter and easier.
Stuffed potato ingredients
8 very large potatoes (it depends on how many people participate, add one for each).
500g of straw potatoes
1kg chicken breast cut into cubes
butter
300g of bacon cut into cubes.
2 tablespoons crushed garlic
1 large chopped onion
3 tablespoons ketchup
2 tablespoons mustard
3 tablespoons tomato sauce
2 cans of sour cream
1 glass of sliced champignon
500g of catupiry or curd.
Method of preparation
Cook the whole potatoes in salted water until they are soft, without undo, and take them to roast.
Meanwhile, prepare the stroganoff. Whatever you prefer, it could be chicken, filet mignon, shrimp or maybe lamb!
Season the chicken cubes with crushed garlic, salt and pepper to taste and mustard.
Heat a large pan with the butter and sauté the onion until lightly browned.
Put the chicken pieces and saute over high heat for about 5 minutes.
Add the sliced champignons and saute for another 1 minute.
Then reduce the heat and add the ketchup, the tomato sauce, the mustard. Mix well.
When it starts to boil, add the cream and mix well until it boils again. Add salt and pepper.
In a separate pan, fry the bacon cubes.
Remove the potatoes from the oven:
Once cooled, cut into a cavity in the center of the potato.
Using a spoon, knead the inside to create more space.
Add the salt and butter and fill them in this sequence with strogonoff, catupiry or refining, bacon into cubes.
Finish with straw potatoes to taste.
