Lamb Loin Chops And Basil Potatoes

Lately Lamb is one of my favorite meats to work with. It has a strong distinct flavor which requires little seasoning to end up with good results.

Here is one of the more simple recipes I use. Great for beginner cooks and anyone who doesn't want to spend a ton of time in the kitchen for a great meal.

**Ingredients **

2 lb red potatoes
Olive oil
Sea salt
Black cracked pepper
Dried basil
Garlic powder
Dried Rosemary
Lamb (bone in) loinchops
Apple cider vinegar (for sprinkling lamb chops)

Preheat oven to 450° F

Cube red potatoes into 1" cubes

Place in a glass baking pan in a single layer

Coat potaotes evenly with oil, then lightly sprinkle with salt, black pepper and basil place in oven for approx 40 minutes or until crispy golden brown on edges.

-Evenly coat a skillet with oil for searing the lamb chops it is essential to get a good sear on both sides to seal in the flavor and juices

-Coat chops evenly with olive oil.

-sprinkle with sea salt, black pepper, and rosemary.

-Place chops in good hot pan (medium high heat) turn on the hood or crack a window it's going to get smoky for a couple of minutes or until they have a nice brown crisp exterior.

-Once you have achieved a good sear sprinkle chops with a few dashes of vinegar this will add a little tang and the acid in the vinegar will make for more tender chops

-Place chops on a baking pan and finish them off in the oven at about 350°F 30 minutes should be about right for a medium well done chop. Adjust according to your preferences.
