Jezanne's Recipe #12 : Homemade pineapple paste

Preparing our own paste is NEVER cheap even after we compare all the tangible costs with the most luxurious and expensive storebought ones. Hidden factors like time and effort need to be taken into consideration too! That being said, painstakingly making the paste in our own kitchen gives us so much more control over the texture, level of desired sweetness and consistency which we aim to achieve in every ball of pineapple paste that will be rolled into every tart that we're gonna make.


Pineapple Tarts

This super easy recipe teaches you how to make your own pineapple paste from scratch by only using 4 ingredients.

Ingredients
3 Pineapples
200g castor sugar
4 Cinnamon Stick
11 Cloves

• Remove the skin and carefully remove the 'eyes' of the pineapple.

• Give it a quick rinse, pat it dry and cut into smaller, easy to manage pieces. Preferably thumb sized.

• Blend the pineapple chunks inside a blender or food processor until fine.

• Pour the blended pineapples into a strainer to remove the juices for later use.

• Add sugar, cinnamon sticks and cloves into a deep saucepan and cook over medium heat until the sugar dissolve.

• Add in blended pineapple.

• Keep stiring and cooking till the mixture become dry and brown in colour. During this time, you can pour the saved up pineapple juice from before into the mixture and cook it all till dry and form a sticky substance.

• Allow it to cool completely before removing the cinnamon stick and cloves and transfer to a jar.

Voila! Your homemade pineapple paste is done and ready to be rolled into pastries for future baking! Happy trying everyone!
