Bolognese Stuffed Zucchini Boats {Gluten Free, Low Carb}

Here's a is an absolutely delicious, skinny dinner recipe for two: Baked zucchini boats stuffed with Bolognese sauce topped with a lot of cheese {low carb, gluten-free, clean eating}.

Zucchini is extremely low in calories and carbs, but it gives you the feeling of being full, with a neutral taste it won’t ruin the familiar flavor what you’re waiting for. Also zucchini has amazing health benefits and gives you a lot of vitamins which could sound weird when we are talking about pasta dishes!

Traditionally Bolognese sauce is made of ground beef and pork. My thick and rich meat sauce is made of authentic ingredients: ground pork, organic tomato puree, peeled tomato chunks, onion, garlic, carrot, cheese and a bunch of herbs and spices. Use Italian spices to season the Bolognese sauce like parsley, rosemary, thyme, oregano, basil and bay leaves. This classic Italian bolognese sauce is cooked low & slow for a rich, hearty taste.

Bolognese Stuffed Zucchini Boats


Prep time: 10 mins | Cook time: 65 mins | Serves: 2-3

Ingredients:

  • 200 g | 7 oz minced pork (or 100 g pork + 100 g minced beef)
  • 1 medium onion, chopped
  • 2 cloves of garlic, chopped
  • 1 cup organic tomato sauce
  • 1 carrot, chopped
  • ½ cup peeled (plum) tomato chunks
  • 1 teaspoon oregano
  • ¼ teaspoon rosemary
  • ½ teaspoon parsley
  • 1 teaspoon paprika
  • ½ teaspoon basil
  • salt
  • pepper
  • ¼ cup wine (optional)
  • 2 tablespoons olive oil
  • 2-3 medium zucchini
  • ⅓ cup grated cheese (Parmesan or Cheddar)

Let's cook!

  1. In a large skillet heat one tablespoon olive oil. Add the chopped onion, sauté. Add the chopped garlic and carrot pieces. Add the ground meat and stir well with the veggies. Cook the meat until it turns white.
  2. Season the meat with salt, pepper and paprika, then add the tomato sauce and peeled tomato. Season the sauce with the herbs, stir well, cover and cook on low heat for 35-40 minutes until the Bolognese thickens.
  3. Occasionally stir the sauce, add water, ¼ cup wine or more tomato paste if necessary.
  4. Preheat the oven to 180 °C | 360 ℉. Grease a baking pan with olive oil.
  5. Cut the zucchini lengthwise and scoop out the center with a spoon or ice cream scoop. Season the zucchini boats with salt and pepper.
  6. Bake the zucchini boats for 10 minutes before stuffing them with the Bolognese sauce.
  7. When the meat is cooked, stuff the boats with the sauce and place them into the baking dish. Top the stuffed boats with grated cheese.
  8. Bake the boats for 10-15 minutes until the cheese is melted and the zucchini is soft.

Diet: low-carb, gluten-free, clean eating

It is a bit irritating that you're writing that this meal is healthy because minced meat is not healthy at all. The WHO declared (red) meat as unhealthy as smoking cigarettes! Did you know that? :) Have a nice day!

Thank you for your feedback! I really really doubt that "(red) meat is as unhealthy as smoking cigarettes". Actually, I googled it and I couldn't find that fact anywhere. What I've found on WHO official site is this: "epidemiological studies suggesting that small increases in the risk of several cancers may be associated with high consumption of red meat or processed meat. Although these risks are small, they could be important for public health because many people worldwide eat meat and meat consumption is increasing in low- and middle-income countries."
Also this: "... processed meat has been classified in the same category as causes of cancer such as tobacco smoking and asbestos (IARC Group 1, carcinogenic to humans), but this does NOT mean that they are all equally dangerous." FIY this article talks about processed meat not read meat!! Source: http://www.who.int/features/qa/cancer-red-meat/en/ In the same article is also mentioned that: "Eating meat has known health benefits." ...

  • This recipe fits into low carb diet. Low carb diet, alongside Ketogenic, Paleo, Whole30 and Atkinson diets, says to base the diet - among other foods - on unprocessed red meat . I'm sure all those people who created these diets are not wrong.

  • The recipe is considered "healthy" because has no gluten/flour/wheat in it (like the original Spaghetti Bolognese) + it's low in carbohydrates (roughly 10g sugars/2 zucchini boats)

First of all:* Sorry! *

I messed it up because I thought minced meet would also be preserved but as it shows it's a carcinogen class 2a.

"Simply putting beef through a mincer does not mean the resulting mince is "processed" unless it is modified further.
Processed meat includes bacon, sausages, hot dogs, salami, corned beef, beef jerky and ham as well as canned meat and meat-based sauces."

Among red meat you'll find also the herbicide Glyphosate.
