Giant Beets!
Do you think I waited too long to pick my beets?
To save cooking time, I cut them in half before boiling. After 40 minutes, the skins slipped right off.
I cut them into cubes, added some sliced onions, and covered them with a marinade of vinegar, water, sugar and salt. We will be enjoying pickled "giant" beets in a few days.
Those some big beets! They look really good, so many people forget about beets. We loved them when I was a kid, gonna have to get me some now.
I cant believe how fast they grew...seems they were the size of golf balls last time I looked!
Those look good! a lil bunny rabbit ate all of mine this year right as they came up. We have a good stock of canned and pickled but I always like to have a few fresh ones around.
That bunny has good taste. We like to add baby beet greens to salad too. I planted a scond crop. Just hoping the winter holds off long enough to harvest them!

I planted a second crop so I'm sure we'll be eating them for a long time!

I'm no beet expert, but they look pretty good to me. Smooth and shiney. From my understanding it depends on what tou want them for. Smaller have more flavour, bigger are good for pickling. Enjoy!
