Butelo, traditional bones sausage from the Bragança area (but not only, it is also known as "Guarda", for example). Do not be deceived by the description, nowadays noble parts of the pig are used in their preparation, and the rough aspect contrasts with the excellent taste! A typical dish from this carnival period served with the chasubles of the previous post.
