This Omelette Recipe is one way👇🏼 454 Calories 🍳
🥚 I used Free Range Hen Eggs. I rotate my Eggs between hen and duck. They both have their own nutritional merits.
🥗 Every meal, I do my best to have Vegetables. Guess what, I vary them too as they all have many unique benefits.
• Packing Fibre, fuel for your microbiome, Proving slower releasing absorption of Macro nutrients.
• Pumping Potassium, essential for nerve, muscle function & blood pressure! Reducing risks of hypertension & kidney stones!
• Powerful Phytonutrients: they are found in vegetables & fruit (personally I prefer Veg as my main source without the insulin spike for the most part!) these powerful antioxidants like Carotenoids important for immune system, Polyphenols for cell protection & heart health & Plant sterols / stanols optimising cholesterol & many more! ——
👉🏼 Ingredients
4 Eggs
30g Wild Rocket
60g Asparagus
50g Tomatoes
40g Blueberries
50g Radishes
30g Avocado
1 tsp Ghee
1 tsp EV Olive Oil or more if you want

👉🏼 Recipe

  1. Whisk eggs. Heat wide saucepan to med, add ghee. Allow to melt, add the eggs!
  2. Allow to slowly set slightly & folding in the sides, allowing any egg mix to flow into gaps. Cook until top just set, approx 3mins, turn heat off
  3. Steam asparagus for 2-3 Mins. I do not use or own a microwave! Some Studies show they don’t effect nutrients but I disagree!
  4. In a large bowl, mix all the veg + berries & add on to plate.
  5. Fold the omelette over & add to plate.
  6. Slice up an Avocado & Happy Days!
