Cookies to Santa: Sassy Alfajores.

Hello my dear Steemit family, I hope today you are doing well this wonderful week. We are only a few days away from December 24th, normally we used to dine with the family and the whole thing, before dinner we eat different things like cookies, breads, etc. Today I bring you a recipe that will leave more than surprised because of the combination of the tropical flavors between a couple of Alfajor cookies. By the way, the Alfajor is a very soft Argentine biscuit or biscochito filled with dulce de leche and that is finally rolled in grated coconut. So, this dessert gave me all the inspiration to create this new recipe because I wanted something more exciting than the ordinary Alfajor for this Christmas.

Also, this recipe is a perfect snack for these days as well as a gift if you put them in a bottle or in a decorated box. I would die of love if someone gave me these decadent Alfajores as a gift. Ingredients:
For the dough:

  • 150 grams of corn starch.
  • 80 grams of wheat flour.
  • 50 grams of sugar
  • 50 grams of butter.
  • 1 egg.
  • 1 teaspoon vanilla
  • 1/2 teaspoon baking powder.

For the orange marmalade:

  • The juice of 7 small oranges.

  • The pulp of 4 small oranges.

  • 1 cup of sugar.

  • 2 tablespoons of Parchita estract (passion fruit).
    For coverage:

  • 100gr of dark chocolate in bar.

  • 1 tablespoon unsalted butter.

To prepare the orange marmalade first add in a mixing bowl: the sugar, the orange pulp, the orange juice and half a tablespoon of the essence.

Pour all the mixture in a pot and put it to cook over low heat. Stir in circles all the time and if the mixture becomes very thick add a little water and keep stirring. To know if it’s ready put a little of the marmalade mixture on a plate and draw a line with your finger in the middle of the drop and if the jam does not cover the line again it is ready. This will take 10 or 15 minutes.

For the dough, the first thing you should do is mix the butter with the sugar in a bowl until it is all integrated. Then add the egg and vanilla and mix until everything is well integrated.

Add the dry ingredients and mix with a spatula until the mixture looks homogeneous.

Knead, a few minutes on a flat surface only until it is all together. Put the dough in the refrigerator covered with plastic wrap for one hour.

Stretch the dough on a flat surface and cut the dough with a cookie cutter with the shape you want I chose heart shape because it seems super cute.

Grease a baking tray and flour it, then put the cookies in the tray.

Bake for about 20 minutes at 150 degrees.

Cover the bottom half of the cookies with the orange marmalade and then cover them with another cookie.

Melt the chocolate with a spoon of unsalted butter s in a bain-marie or in the microwave in 10-second intervals so that the chocolate does not burn.

Pour the melted chocolate over each Alfajor randomly it does not have to be perfect; the idea is that each one get different design. When you have finished, put them in the refrigerator for a few hours until the chocolate has hardened.

And that's it, you got some delicious alfajores, they look very beautiful. This was an idea that I had in mind for a while and seeing them ready they turned out much better than I expected and they have a very good flavor.
