Vietnamese crab noodles soup recipe.

Ingredients.

  • 500 grams of pork marrow bone.
  • 200 grams of mashed crab (fresh or canned).
  • 100 grams of minced pork.
  • 50 grams of dried shrimp.
  • Rice noodles.
  • 1 yolk egg.
  • 1 shallot (finely chopped).
  • 3 cloves of garlic (finely chopped).
  • 4 cloves garlic (finely chopped) for dipping sauce.
  • 3 tomatoes (cut into wedges).
  • 1 pack of tofu ( cut into large cubes).
  • Green onion (thinly sliced), annato seed oil, shrimp paste, salt, fish sauce, rice vinegar, chilli and sugar.
  • Lettuce, perrila, elsholtzia.

Instructions.

  • Prepare the broth: Bring to cup of water, bring to a boil over high heat. When the water is boiling, add the pork marrow bone for about 2 minutes just clean it. Drain and rinse it until water is clear.
  • Pour 8 cups of water in a pot, bring to a boil. Add the pork marrow bone, wait until is boiling for about 1 minute, turn lower the heat and simmer for about 1 hour.
  • Meanwhile, prepare the crab broth: Combine the mashed crab with 2 cups of water in the saucepan, mix well. Strain and sieve the mashed crab. Bring to a boil over medium heat, add 1 teaspoon salt and stir well for about 4 minutes until the crab meat float to the surface. Slowly remove the cooked crab meat and put it into a bowl. Set aside.
  • Soak the dried shrimp with warm water, drain and rinse until the water is clear. Minced the dried shrimp and set aside.
  • Prepare the shrimp: In the large bowl, mix well minced dried shrimp, yolk egg, minced pork, shallot, garlic, 1 teaspoon salt and 1 teaspoon sugar. Put it into the refrigerator.
  • After the broth has simmered for about 1 hour, add the crab broth and bring to a boil for about 2 minutes.
  • Take out the shrimp, and scoop a spoonful into the broth to form "shrimp ball".
  • If you want to eat tofu: Heat oil in a pan, fry the tofu on the both side until golden. Add the tofu into the broth which you've just cooked.
  • Heat annato seed oil in a pan, add the tomatoes, stir fry well for about 1 minutes, add the stir fried tomatoes into the broth. Season with 1/2 teaspoon shrimp paste, sugar and salt. Then add cooked crab meat into the broth. Bring to a boil over medium low heat for about 1 minutes.
  • Prepare the dipping sauce: Mix sugar, garlic, lime juice, black pepper, chilli, rice vinegar, boiled cool water and fish sauce in the bowl and stir together, the important thing is that taste the sauce (sweet and sour).
  • If you using dried rice noodles: bring a large pot of water to boil, soak rice noodles, stiriing until softened, usually about 6 minutes. Drain and rinse with cool boiled water.
  • Arrange the rice noodles in the bases of deep serving bowls and add slices of cooked meat on top. Ladle over the broth and sprinkle over green onion. Serve hot with dipping sauce, lettuce, perrila, and elsholtzia.
