Vegan No-Bread Lettuce Wraps with Kidney Beans

If you are on a mission to eat less bread and carbs or up your veggie intake, then these lettuce wraps are for you. If you're craving a sandwich, try these easy-to-assemble lettuce wraps. I'm sure they will amaze your taste buds.
Ideal dish for the plant-based muncher!
Ingredients (serves 2)
For the salad
3/4 cup cooked kidney beans, rinsed and drained
1 cup red cabbage, chopped
1/4 cup spring onion (scallion), chopped
1 cup fresh spinach, chopped
1 cup tomato, diced
1/2 cup cucumbers, diced
4 big leaves iceberg lettuce (to make lettuce wraps), romaine lettuce works too
For the avocado dressing
1/2 avocados
1 clove garlic
1/2 lime or lemon juice only (use less if using lemon)
sea salt to taste
black pepper to taste
Instructions
- Combine all dressing ingredients in a small blender or food processor. Process until smooth. Add a little water if needed.
- Combine all veggies, toss to combine.
- Top big iceberg lettuce leaf (use the outer leaves for this) with veggies and dressing.
- Wrap it up. Add toothpick if needed or wrap in plastic or tin foil to take along.
