VEGAN COMFORT FOOD: Shepherd’s Pie with Cauliflower Millet Mash

Shepherd's pie is pure comfort food during the colder winter months. Yes, even in tropical Cambodia we have our "winter months." Though temperatures are still well above 20C or 68F, mornings and evenings can be quite chilly... but I'm loving the change of season.

Although I would love to go for a swim in the ocean today! It's been a week since we moved back down to the coast and I haven't had a swim! In the beginning, we were arranging things for the new house and unpacking boxes, while the past few days afternoons where rainy and cold. Maybe some more luck today!

Though, I love making vegan Shepherd's pie on cold rainy days as these.

Shepherd’s Pie with Cauliflower Millet Mash

Ingredients (serves 2-3)


For the cauliflower millet mash


  • 3-4 cups cauliflower florets
  • 0.5 cup uncooked millet
  • 2 tbsps nutritional yeast
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Nutmeg, sea salt and black pepper to taste
  • ½ cup Panko breadcrumbs
  • Splash of nut milk (we used almond milk)

For the shepherd's pie filling


  • 1 cup, chopped
  • 2 cloves garlic, minced
  • 1 cup carrot, chopped
  • 1.5 cup broccoli florets
  • 1 cup daikon radish, chopped
  • 2.5 cup tomatoes, diced
  • 2-3 cup shredded spinach
  • Water
  • Dried thyme,
  • Thyme, rosemary, oregano, sea salt and black pepper to taste
  • Raw palm sugar

Directions


  1. Bring millet, cauliflower, water and a little salt to a boil. Reduce heat and simmer covered until the cauliflower is tender and the millet is cooked. This will take about 20 to 30 minutes. When ready mash/blend the cauliflower and millet with the other ingredients.
  2. Meanwhile, make the pie filling. Sauté the onion in cooking oil over medium-high heat until they are translucent and begin to brown, This will take about 3 to 5 minutes. Add the garlic, radish, carrots, and broccoli, and cook for another 3 minutes. Then stir in the diced tomatoes and water. Season with herbs and a little sugar to taste.
  3. Preheat oven to 200C or 400F. To assemble the pie, spread the vegetable mixture in a casserole or oven-safe dish. Top with the cauliflower millet mash. Cook for about 20 minutes in the oven. Or until the mash starts to brown slightly.

Yum! I love Sheppard's pie but not millet

Is the texture similar to mashed potato?

Yup... at least if you use the blender to mash it. The millet blends nicely in with the rest of the flavors, but you could use quinoa, bulgur or other (pseudo)grains too ;)

Yeah I saw some recipe using quinoa for shepperds pie. I have yet to try with grains , only with mashed potatoes (boring right?😂)

Hehe... well they can be boring indeed. Depends how you cook them. Love mash potatoes though! Btw, It is lovely with sweet potato mash too.

Same here... but after more than 3 years living in Cambodia everything under the 25C feels cold to me... hehe. Where are you from?

I am from Malaysia, its a tropical country in Asia where the weather is usually between 25°c-32°c depending on the month...sometimes it could go higher...so if i want to see snow i can only go out of the country to experience what winter feels like... XD
