Vanilla Flavored Mango Chia Seed Pudding

Yummy, make-ahead power breakfast or snack on the go. Thanks to their jellifying effect and impressive amount of nutrients with few calories, chia seeds have become one of the most popular superfoods in the health community.

They are packed with fiber, high-quality protein, omega-3's, magnesium, manganese, calcium, and phosphorus. They also contain a decent amount of zinc, vitamin B3 (Niacin), potassium, vitamin B1 (Thiamine) and vitamin B2 (Riboflavin).

Because of their wonderful ability to absorb (10 times their weight) both water and fat, they can be used to thicken sauces, dressings, and they can even be used as egg substitutes in vegan recipes.

Ingredients

For the pudding

1.5 cup mangoes chunked
1.5 unsweetened coconut milk or use almond milk to keep calories down
3/4 cup plain unsweetened (coconut) yogurt
1/4 cup chia seeds
1/2 lime or lemon juice only (use less if using lemon)
1 tsp vanilla extract
1 tbsp maple syrup/honey or to taste

For the topping

0.5 cup mangoes cubed
1 tbsp unsweetened shredded coconut
2 tbsp dried goji berries (optional)

Instructions

  1. Add all pudding ingredients to the blender and blend until completely smooth. Taste! If you’d like it sweeter, add honey/maple syrup to taste and blend again until smooth. For me, the mangoes were sweet enough so I added no extra honey or maple syrup.
  2. Transfer the mixture to small jars or glasses. Place the jars/glasses into the fridge for at least 1-2 hours, ideally overnight.
  3. Top with extra mango cubes and goji berry. Or any other topping - such as cacao nibs, mulberries, or sliced almonds - if you like.

I had a creation a few weeks ago using Chia seeds. It was a big hit, but I didn't get any photos, so therefore, no post. But, I'd like to throw my support into your post about their usefulness. Steem ON!

We love chia seeds! We often use them to make raw jams, pudding or we use hem as an egg replacement in veggie burgers or baked goods. Looking forward to some of your chia seed creations!

I will try to move it up higher on the list(s). I have several

This is definitely one to try for me!! I love mangos and the rest just looks to make it even more yum!
