Turmeric Chicken Spring Salad with Homemade Italian Dressing
Who is up for a healthy spring salad? If you haven't jumped om the turmeric carze just yet then now is your chance. Turmeric is one of the most potent healing herbs out there. It has strog anti-inflammotory and cleansing properties to boost overall health... and it adds a great taste too!
Ingredients
For the turmeric marinade
5 oz. skinless boneless chicken breast, cut into bite-size pieces
1 tsp turmeric powder
1 clove of garlic, minced
1-2 tbsps extra-virgin olive oil
black pepper to taste
For the spring salad
1 cup red cabbage, shredded
1 cup tomatoes, sliced
1 cup cucumber, sliced
2 cups salad greens of your choice
For the Italian dressing
1 tbsp mustard
1 tsp honey
2 tbsp apple cider vinegar
2 tbsps extra-virgin olive oil
1/2 tsp dried thyme
1/2 tsp dried rosemary
1 tsp dried oregano
black pepper to taste
sea salt to taste
Directions
- In a Ziploc bag, combine all marinade ingredients with the chicken. Massage the chicken pieces with marinade and let sit for at least 4 hours. Overnight is best.
- Heat cooking oil in a skillet over medium to medium-high heat. Cook chicken pieces with the marinade until nicely browned.
- Meanwhile, combine all Italian dressing ingredients in a small bowl and whisk until combined.
- In a large bowl, combine all salad ingredients in a bowl.
- Add the salad to plates, top with cooked chicken (hot or cooled down) and drizzle with Italian dressing.
