TOASTED QUINOA SALAD WITH AVOCADO, RED BEET AND ORANGE MUSTARD DRESSING 🥑🍊🌱

Greetings fellow steemit foodies. How are you all today? Though life is a little busy right now, preparing the move and running the bakery, I am getting really excited here. If you have been following my story you might know that last year we moved into this beautiful 2-hectare property filed with fruits trees.

Unfortunately, our greedy landlady decided to go the price with 100% for this year, so we could no longer stay here as we are not willing to pay double. But then karma happened, we found a 4-hectare plot of land again packed with different kinds of fruit trees and cheaper as the monthly rent we pay know..... woot-woot.

I am sure you can imagine how thrilled we are to move and explore that beautiful piece of land once again located at the foot of the national park.

Pics and stories of our finds will follow soon. If all goes well we move Wednesday and Thursday, which are the closing day of our bakery.

TOASTED QUINOA SALAD WITH AVOCADO, RED BEET AND ORANGE MUSTARD DRESSING

INGREDIENTS (SERVES 2)


For the quinoa salad


1/2 cup cooked quinoa
3 cups salad green of your choice
1 avocado, cubed
1/4 cup finely chopped spring onion
1 orange, peeled and chopped
1 cup raw red beet, cut into thin matchsticks
2 tbsp unsalted sliced almonds (optional)

For the orange mustard dressing


0.5-1 tsp grated orange zest
1 tbsp fresh orange juice
1 tsp vegan mustard
2 tbsp extra-virgin olive oil
1 tbsp walnut oil (avocado or other oils work too)
Black pepper to taste

DIRECTIONS


  1. Cook the quinoa according to the instructions on the package. This will take about 15 minutes.
  2. Combine all salad ingredients in a bowl. Toss to combine and set aside in the fridge.
  3. In a small bowl, whisk together all dressing ingredients. Set aside in the fridge.
  4. To toast the quinoa, toss cooked quinoa with olive, coconut or avocado oil. Season with salt and pepper. Place in hot skillet or wok and toast until fragrant and slightly browned. This will take 5 to 10 minutes.
  5. Combine all ingredients in a bowl or plate and drizzle with the orange mustard dressing.

That is incredible, finding a 4-hectre lot of land packed with fruit trees. Couldn't happen to a better person. I can't wait to see photos of your new place. This quinoa salad has so many different textures and flavors going on. It's creamy, crunchy, sweet and tangy. Thanks for giving me my lunch idea for tomorrow @amy-goodrich.

It is getting hard in Cambodia to find a nice and quiet spot to live. Chinese are invading and putting up high rises and casinos which makes prices for housing and land very high. Most Cambodians can no longer pay for these rents or buy land ;( We'll see how it goes. If things keep evolving like this we might take up a new adventure next year. Let's see where life takes us!
