Soft And Chewy Blueberry Bliss Superfood Bars
Looking for a power breakfast or snack? These blueberry bliss superfood bars might be just the thing you need. They are soft and chewy and packed with so many good-for-you ingredients to fly through your day.
Though I will have a green smoothie later this day, some mornings I just need that little extra to fully energize my body and today was one of those days. We had a late night, meeting up with people, hence me needing something more substantial to get my body the energy it needs to start my day.
I'm one of those people that really need 8 hours of sleep. Since it was midnight before I made it to my bed and woke up at 6 am... a strong cup coffee and a superfood breakfast bar were the things I needed.

Ingredients (makes 8-10 oatmeal bars)
Oatmeal bar base
2 bananas
2 cups rolled oats
1 cup raw unsalted cashew nuts
4 tbsps raw honey or maple syrup for vegans
1 tbsp extra virgin coconut oil
Pinch of sea salt
1-1.5 tsp ground cinnamon, or to taste
1.5 tsp vanilla extract
Breakfast bar topping
1 cup fresh blueberries
1/2 cup rolled oats
1/4 cup mixed nuts, chopped
1/4 cup sunflower seeds
1/4 cup almond milk
1/4 tsp ground cinnamon
Instructions
Breakfast bar base:
- Preheat oven to 350°F or 175°C.
- Combine all breakfast bar base ingredients in a blender or food processor. Process until well combined.
- Line a 9 x 9 baking pan with parchment paper. I used 2 smaller pans since I do not have a 9x9.
- Pour the base mixture into the pan. Bake for 10 minutes.
Blueberry topping
- While the base is baking, combine all blueberry topping in a bowl and stir well to combine.
- Remove the base from the oven and spread topping evenly over the cooked base, pressing the mixture lightly down into the base. Bake 15 to 20 minutes or until the oats are crisp.
- Can be served hot or cold. The breakfast bars can be stored in the fridge in an airtight container for up to 1 week.

I love oatmeal but recently I discovered it has gluten and I have Celiac Disease, so I can't eat it because of that, I hope I can find an oatmeal brand that it's gluten free
Thanks for your comment. Oats are gluten-free, unfortunately, they are often processed in the same facilities that process gluten containing grains. Look for the packages that state certified gluten-free.
I live in Mexico and I havent found a gluten free option yet, but I will keep on looking ☺

It's good morning , when you wake up to get a healthy complete breakfast which contains oats and sunflower seeds, blueberries, thank you for giving me such a great idea.

Well, we get other foods on the cheap such as pineapple which is $0.12 for one... mangoes which are about $0.75 a kilo and $2 a kilo for avocados.... so we can not complain and we are going to try and grow our own berries soon-ish. Have a lovely Sunday ;)

Same here. Love them so much... soon I'll have my own and might make a guide to growing berries in the tropics for all people to enjoy these lovely treats.
That sounds great. I would love to grow them as well, but the problem is I live in an Apartment. Would still be interesting to see how you get on growing berries :)
You could try one of those indoor growing systems. Or do you have a balcony? Strawberries do well in hanging pots.

I don't need to mention that it is delicious. The thing that I really like about you, is that you always try to include some kind of seeds in your recipe, be it chia, flax, sunflower. That's really healthy way. Because of you, I found many ideas to include seeds in my diet.

I never tried make bars, maybe it's time to finally do this? Looks so easy, so I think that I won't have bigger troubles with implementation :)
