Raspberry Morning Love

Made this vividly colored power booster for breakfast. Next to their amazing taste, raspberries offer a bounty of health benefits. Going from being a refreshing weight loss aid to soothing symptoms of arthritis and fighting inflammation and cancer.
Although it is hard to beat the fresh flavor of raspberries, if you can't find them fresh know that raspberries (and other berries) don't lose their nutritive value when frozen!
One cup of raspberries is loaded with calcium, needed for bone development and growth; potassium necessary for maintaining healthy blood pressure; and folate, which can prevent neural tube defects in newborns. Furthermore, it is a rich source of antioxidants such as lutein and zeaxanthin. This pair of plant pigments (carotenoids) protects against macular degeneration. Macular degeneration is an eye disease that can cause vision loss.
Ingredients (serves 2 for breakfast)
For the smoothie
- 2 cups kale, packed (or any other leafy green of your choice)
- 3 cups raspberries (fresh or frozen)
- 1 banana
- 1 cup unsweetened coconut milk
- 1 cup unsweetened coconut water (or filtered water)
Toppings (optional)
- 2 tablespoons dried goji berries
- 1 tbsp chia seeds
- 2 tablespoons unsweetened coconut flakes
Instructions
- Blend kale, coconut milk, and coconut water until smooth. Add remaining ingredients and blend again.
- Optional: top with goji berries and coconut flakes if you like. Other possible toppings: cacao nibs, chia seeds, hemp hearts, etc.
Recipe Notes
- Use one or more frozen fruits to chill the smoothie.
- If the smoothie is too thick for you, add more liquid base.
*If you have a high-speed blender you can throw in everything at once.

I love kale in smoothies. If you put enough fruits (especially sweet fruits) in there, you won't taste it at all. You can use spinach too.
