Quick and Easy Veggie Lunch Wrap with Carrot Avocado Paté

When it comes to healthy snacks, your options are endless. Lately, I have been obsessed by a simple avocado carrot pate combined with veggie sticks. Having a huge batch of it in the fridge right now inspired me to make a veggie wrap with a thick layer of my current favorite spread. Non non nom!

Ingredients

For the pate

1/2 avocado
1 cup carrot, roughly chopped
1/2 orange, juice only
2 tbsp extra-virgin olive oil
sea salt to taste
black pepper to taste

For the wrap

1.5 cup red cabbage, shredded
2-3 cups salad greens of your choice shredded
1.5 cup tomatoes, sliced
4 small wrap or tortilla

Instructions

  1. In a small food processor or blender, combine all pate ingredients. Process until smooth.
  2. Top wraps with a thick layer of carrot pate and veggies. Fold and serve!
