Lunch Salad: Spiralized Zucchini with Feta and Sun-dried Tomato Pesto
Zoodles anyone? Zoodles are an excellent, tasty, and heathy alternative to pasta. It's a fun way to increase the amount of vegetables you eat. And these veggie noodles are not limited to zucchini only. You can make them from carrots, red beets, sweet potatoes, pumpkin, and so much more.
Ingredients
For the pesto
1/4 cup sun-dried tomatoes
1 clove garlic
1 tbsp balsamic vinegar
2 tbsp sunflower seeds or pine nuts
2 tbsp water
3 tbsp extra-virgin olive oil
sea salt to taste
black pepper to taste
For the salad
2 zucchini, spiralized
1/2 cup sliced red onions
1 cup halved cherry tomato
1/2 cup sliced green olives (optional)
2 oz crumbled feta cheese
Instructions
- In a small blender or food processor, combine all pesto ingredients. Process until a smooth paste.
- Spiralize zucchini.
- Add zucchini noodles to a plate, top with other salad ingredients. Add pesto and gently stir to coat.
FYI: you can cook the zucchini noodles in a pan with oil if you prefer them softer.

i was wondering what spiralized zucchinni is. actually, I've tried noodles made with carrot also made with spinach. they are quite good.
Using a julienne peeler or spiralizer you can make pasta-like strands from zucchini or other veggies... I prefer them over normal pasta. Here is an article I once wrote for my website about it http://www.body-in-balance.org/blog/nutrition/spiralized-vegetables/
