Hot Crispy Coleslaw Sandwich with Parsley-infused Cashew Ricotta
Since I have always been a cheese lover, reducing dairy in my diet hasn't been easy! Luckily, I discovered cashew cream and nutritional yeast! Though we don't eat bread very often, this is a sandwich that keeps coming back! The cashew ricotta and crispy, cooked cabbage are just yum!
Ingredients
For the cashew ricotta
1/2 cup raw unsalted cashew nuts soaked and drained
1/2 tbsp apple cider vinegar
1/2 lime, juice only
1/4 cup water
1/2 cup fresh parsley chopped
1 tbsp nutritional yeast
Black pepper and sea salt to taste
For the sandwich
4-8 slices bread of your choice, we used rye bread
1 cup bell pepper, diced
1 cup shredded Chinese or napa cabbage
1 cup shredded red cabbage
Black pepper dried oregano and sea salt to taste
Directions
- Soak the cashew for at least 1 hour. The longer you soak the creamier the ricotta will be.
- Combine all cashew ricotta ingredients in a small blender or food processor and process until creamy texture. Add more water if needed.
- In a pan/skillet heat cooking oil over medium-low heat. Stir in bell pepper and cook for 2 minutes. Then add Chinese and red cabbage and mix well. Cook for 2-3 minutes or until cabbage starts to release its water. Do not overcook. the cabbage should maintain its crunchy texture.
- Add cashew ricotta cheese to the cabbage mixture and stir well to combine. Add oregano, salt, and pepper to taste, mix well and cook for another 2 minutes. Or until heated though.
- Spoon the mixture on a slice of bread. Cover it with another slice of bread.
- Optional: use a sandwich/panini maker or the grill of the oven to grill the sandwich. Or toast the bread first and stuff with the filling afterward.
