Easy Weeknight Dinner: Spiced Chicken, Broccolini, and Sweet Potato Bake

Easy, yummy recipe that only takes 30 to 35 minutes to make. Perfect for those busy weeknights. If you can't find broccolini, broccoli is just fine too. Broccolini is a green vegetable similar to broccoli but with smaller florets and longer, thinner stalks. It is a cross between Chinese broccoli and broccoli.

Ingredients (serves 2)

For the veggies

3 cups sweet potato (any color or variety), cubed
2-2.5 cups broccolini (or broccoli) florets
1/2 tsp paprika powder
1 tsp dried oregano
1/2 tsp dried thyme
sea salt to taste
black pepper to taste
1-2 tbsp extra-virgin olive oil or melted coconut oil

For the chicken

10 oz skinless boneless chicken breast, chopped into bite-size pieces
1/2 tsp ground cumin seeds
1 tsp paprika powder
1 tsp dried oregano
1/2 tsp dried thyme
1/2 tsp chili powder to taste
1/2 tsp garlic powder
sea salt
1 tbsp extra-virgin olive oil or melted coconut oil

Instructions

  1. Preheat oven to 425°F or 220°C.
  2. Toss the chicken pieces with the spices and a drizzle with cooking oil. Stir to combine; store in the fridge while you prep the other ingredients.
  3. Add sweet potato cubes to an oven sheet or oven-safe dish. Season with paprika, thyme, oregano, salt and pepper to taste. Drizzle with a little cooking oil and roast for 20 to 30 minutes.
  4. After 15 minutes, arrange the broccoli on its own baking sheet or oven-safe dish (preferably ones with edges to catch drips). Drizzle with cooking oil and sprinkle with salt and pepper to taste. Arrange the spiced chicken pieces next to the broccolini. Or use a separate baking dish if you have one left. Bake for 12 to 15 minutes. Drizzle with extra cooking oil if needed.
  5. Serve and eat!
