Cassava Patties - Delight yourself!

The most interesting part is taking out the shell to get the edible part. Some times we don’t know how to get the shell out so we try to peel it like a potato, but the truth is there’s a simple method to get the shell out with little effort. I brought you some pictures to illustrate this and make it easier. A simple trick is to follow the direction of the fibers on the tuber which go on longitudinally. The first thing is to stick the edge of the knife deep enough the shell, just like a wedge. Then we twist the knife to make the shell stick out of the soft part of the tuber. We should note this makes not only the brown skin go out, it also takes out a white part of the shell, which is the most important part to take out, as this part is really bitter. On the next picture you can see the difference between the shell and the inner part of the tuber. Have a gif so you can see better and illustrate more on this point. Then we proceed to cut the tuber, the yuca has some fiber or internal membrane, we also need to take out this fiber, it’s not edible and is really tough and hard. The easiest way to get this part out is to stick the knife in the direction of the fiber and then twist it again. Now we proceed to cook the Yuca in a high pressure pan with a lot of water for around 1 hour and a half, maybe 2 hours. The Yuca will be ready when you poke it with the knife and its soft, the cooking time may vary. Once the cooking its over, we take the Yuca out and we mash it. Then we put it in the freezer for around 15 minutes. Now take it out of the freezer, put the salt and the flour in, and start mashing again until you have a consistent dough. It’s important to not add more flour than what is needed, because if you do it will taste more like flour and not Yuca (What would be the purpose of preparing the Yuca if that happens?). For the filling we will use plastic bag to put the dough and the filling and then bend it and close it with the help of a plate or dish then you proceed to drop it on a previously heated frying pan with enough oil and take it out when its well fried on both sides.
