Kheer Komola || Orange Pudding || Bengali Recipe
We are presenting another traditional & quintessentially Bengali dessert known as “Kheer komola”. This recipe ages back to at least 200 years. With chilling winter, ‘orange’ or ‘kamlalebu’ aka ‘santra’ brightens up the market with its hue & flavor. Some of us don’t like the combination of citrus fruit with milk. Yet lemons are more tart where as oranges are on sweeter side. Specially from December-February, we get a wide range of juicy, sweet, fresh oranges. Preferably this dish can be made with ‘Darjeeling orange’ as they are sweeter in taste than other variants. The courtesy of this recipe should go to my DIDI(elder sister) as she is the one who introduced it to me for the first time. In Netherlands & for sure in other European countries or US, there are plenty of variations that it seems to be difficult which one to pick for this recipe. After hell lot of trial n error, we ended up selecting “MANDARIN” for kheer komola. Mandarin is sweet, seedless, juicy & comparatively orange in color. So for our viewers who are living in aboard ,you can take ‘mandarin’ or ‘clementine’ without baffling. With minimum preparation and considering the very little effort that goes into it, kheer komola is divine to taste.
Ingredients for kheer-komola:
Full fat milk-1 liter
Orange-100 gm
Orange juice-25 gm
Cardamom powder-3 gm
Saffron-A pinch
Cashew-10 gm
Raisin-10 gm
Almond-10gm
Sugar-120gm
