ZUCCHINI CAVIAR RECIPE (RUSSIAN IKRA)

How to make zucchini caviar or dip at home. This classic Soviet time recipe of zucchini (marrow) spread (puree, sauce, dip) ‘Kabachkovaya ikra’ is super delicious. Zucchini Caviar (Ikra) is an unbelievably yummy vegetable paste which is extremely popular in Russia. It’s so good on bread or crackers! Pure delight! This dip is a delicious way to take advantage of all the great tasting summer zucchini! It is a very healthy recipe and such an easy side dish. This has been a hit every time I've made it! A surprisingly delightful dip for any occasion.

Ingredients

1 large zucchini or squash
2 medium carrots
2 medium onions
500 g (1/2 pounds) of fresh tomatoes or 400 gr tin of chopped tomatoes with juice
3 garlic cloves
1 bay leaf
1 Tbsp of tomato puree
Olive oil (optional)

Directions

Step 1: Prepare all your vegetables. Roughly chop the zucchini (squash), onions, carrots and garlic. I am using a really great Masterslice tool, so it makes my life easier.
Step 2: Put the chopped vegetables into a deep frying pan or a wok with a spoon of olive oil or a little water. Add the bay leaf. Cook on medium until tender. Very soon the zucchinis give up some liquid this is why the oil is not necessary.
Step 3: Add the tomato puree and mix in, then add chopped tomatoes and cook some more until the vegetables are soft through.
Step 4: Discard the bay leaf and puree the vegetables with the hand blender until smooth. Season well with salt and pepper.
Step 5: If you are planning to preserve the zucchini caviar, add 2 tbsp of vinegar and place in sterilized jars.
Step 6: Store squash/zucchini caviar in the refrigerator, serve cold or room temperature with fresh white bread or Russian rye bread as a starter or with some rice as a main dish.

That looks delicious and not too heavy. How long do you think it would last in the fridge? Say if I made it sunday night and wanted it for weekday meals, think it would last until friday?

Yeah it's very light and would last several days in the fridge :) I think it would last untill Wednesday if you made it on Sunday :!
