RUSSIAN BUTTERMILK PANCAKES (OLADUSHKI)
How to make buttermilk pancakes at home. Golden, fluffy buttermilk pancakes make the perfect Saturday morning breakfast. This simple recipe makes perfect pancakes easy enough to whip up any day of the week! We call them Oladushki. They are light and fluffy, and great with sour cream and jam. I have made these for years, and I hope you enjoy them as much as my family has.
There’s a reason buttermilk is so often used in pancakes. The acid in the buttermilk kickstarts the baking soda into action for extra height. These are one of two types of pancakes known to Russian cuisine; they are the thicker ones. Instead of water, and to give a creamier consistency, you can use kefir, which is a sour milk product traditional to Russian cuisine. Oladushki are easy to prepare and are loved by households all around Russia.
Ingredients
0.5 lt of kefir or you can use buttermilk
1 egg
3 tbsp of sugar
pinch of salt
300 gr of flour
1 tsp of soda
oil for frying
Directions
Step 1 : In a large bowl, combine all the ingredients together and add the soda at the very end.
Step 2: Leave the mixture to stand for 15-20 min or until it thickens.
Step 3 : In a large frying pan, heat some oil with butter untill its hot and then add the mixture. I usually use 1-1.5 tbsp of mixture for 1 pancake.
Step 4 : Cook them on medium to low heat untill golden brown from both sides.
Step 5: Enjoy with some icing sugar, sour cream or jam! You can eat them plain as well!
