EGGPLANT CAVIAR
Today I will show you how to make Eggplant or Aubergine caviar spread. It is a yummy dish or starter. This eggplant caviar is so healthy, tasty and perfect appetizer. Perfect for vegetarians and anyone who loves vegetables. I like to serve it on a toasted rye or black bread with some salad. If you like your food spicy, you can add some chilly into the mixture. This served 10-12 people. Whenever I had eggplants lying around, I always made eggplant caviar, ikra. Eggplant caviar makes a great party appetizer or “zakuska”. It’s an old Russian favorite.
Ingredients
1 large eggplant
1 medium onion, finely chopped
2 small carrots, grated
6 garlic cloves, pressed
Olive Oil
1 tsp Salt
1/4 tsp Pepper
1 tsp of sugar
1/2 can of chopped tomatoes.
Directions
Step 1 : Prepare your vegetables. Finely cut your onion, peel your garlic, grate your carrots and cut the aubergine into little cubes.
Step 2: In a frying pan, add some olive oil. Add onion and carrot and sauté until soft (5 min). Add pressed garlic and sauté another 1-2 minutes stirring constantly. I love garlic, so I add a lot of it!Remove from heat and place into another bowl.
Step 3 : In a new pan, add finely diced eggplant, add salt and pepper, stir and cook for 7-10 minutes until eggplant is very soft. Make sure you don’t burn the eggplant, in that case add more oil. Add more oil if the eggplant is sticking to the pan.
Step 4 : Once your eggplant is soft, add your chopped tomato and your onion/carrot mix. Mix well and heat for another minute until the spread is hot. Blend with a hand blender just a bit to make sure the caviar is spreadable!
Step 5: Serve with toasted bread or your favourite crackers.Enjoy!!!

This one of my favorite recipes!! I also do a curry version using basic curry spices, turmeric, cumin seed, chilies, fresh coriander leaves, and asafoetida powder. Wonderful on flat breads!

This has always been one of my favorite things to make during the holiday season. The recipe I use has no carrots, so I'd imagine this might have a little bit of sweetness to it.
