Homemade Granola Bars (vegan option)
Hey foodies!
Last weekend, my family and I went to Salzburg to go hiking and do also other stuff. My mother was totally desperate because she forgot to buy some snacks that we could eat when we need some energy during a long and exhausting hike. So, I made these granola bars still on the day we wanted to drive away because they are quick to make and only need ingredients one may have already in your pantry.
They are my life savers before and during a hike. Carbohydrates, protein and fats - all you need in a single granola bar - to keep you energetic and satisfied over the whole day. Also, this recipe can be easily changed up depending on your preferences. Let me show you how I make them! :)
Homemade Granola Bar Recipe
Ingredients:
- 200 g natural peanut butter (smooth or crunchy) (or any other nut butter)
- 225 g oats (normal or quick or a mix of both)
- 170 g liquid sweetener (honey or for a vegan version: agave, maple syrup, fibre syrup, ...)
- 1/4 tsp salt
- 1/2 tsp vanilla extract
- optional: raisins, flax seeds, chia seeds, chocolate chips, coconut shreds, nuts, ... (I used raisins, flax and chia seeds)
- also optional: chocolate topping (I used the rest of chocolate glaze which I bought)
Directions:
- Mix all of the ingredients together in a bowl.
- Spread in a baking sheet lined baking tin. If you like you can finish it with a chocolate topping like I did. Leave in the fridge for 1 hour or in the freezer for half an hour.
- Take it out of the baking tin and cut it into bars of the size of your choice. Enjoy!
If you love the combination of chocolate and peanut butter you will also love these granola bars. They are so delicious. Take them with you on a long trip and you are good to go for the day. They will last a long time and you can take them with you in your backpack. I hope you will give them a try! :)

They are extremely chewy because there don't get in the oven to bake. I love the texture so much. I hope that is what you wanted to hear @foodie.warrior! :)
