Loving the Kale Salad. The 1/2 Kale and 1/2 Lettuce proportion seems like a winner. Will have to give this a try!

Love anything Kale related but I have to admit that I will take a pass on the Mushrooms when I give it a try but not on the Green Peppers, Carrots and Onion. I've been considering a vegetarian diet lately.
