Easy Student Cooking Recipes: Vol.1 Tasty mackerel
This month I have a ton of workload and studying to do so I decided to start off my blog with some cooking tips for people like me who do not want to rely on junk food for their survival. Today I will make one of my favorites - baked mackerel with vegetables. The end result is highly nutritious and looks like this.

And here is the recipe:
150 g of black olives without stones
3 onions
1 can of tomatoes cubes, about 400 grams
1 kg of mackerel
1 marinated red pepper
1/2 teaspoon oregano
4 tablespoons of olive oil
4 cloves of garlic
the bark of 1/2 lemon
salt and pepper to taste
parsley for serving
Method of preparation:
1 Separate the fish from the bones.
2 The onions and the pepper are cut into strips, and together with the chopped garlic are heated in 2 tablespoons of olive oil in the tray in which you are going to cook the fish.
3 After a few minutes you add in the tomatoes and season with oregano, salt, pepper and lemon bark. Add the olives.
4 Put the fish on top, pour the remaining olive oil and season with salt and pepper.
5 The dish is baked for 10-15 minutes in a pre-heated 200 degree oven with a fan. Serve it with chopped fresh parsley.
It might look a bit complicated, but it really isn't. Hope you like it! Cheers and till next time :)
