🌐🌍♨️COME WITH ME: LET'S COOK🍚 NIGERIAN 🇳🇬 JOLLOF RICE🍲
Jollof rice(pronounced jellof rice by many) is one of the most delicious 😋and preferred rice dishes during all ceremonial events in 🇳🇬Nigeria like parties, weddings, Birthdays, etc.
At events, especially at weddings 👰🤵, you can find some people quarrelling😡 over a plate of jollof rice, lol😁.

Most people fight for this particular dish because of its distinct aroma👃, unique yummy taste😋 or because of its attractive😍 orange-like colour👌.

Here is the recipe for preparing jollof rice for three servings:
2 Cups of long grain rice
1 cup green beans
2 big green bell peppers
100 ml vegetable oil
1 satchet/canned tomato puree/paste or blended fresh tomatoes(either would do the trick)
2 scotch bonnet peppers
2 big onion bulbs
Salt to taste
1 table spoon curry powder
1 teaspoon thyme
1 tablespoon of ground crayfish (optional)
2-3 Seasoning cubes
Time:45 minutes(with low heat)
Let's do this!:
Lets start by seasoning our chicken with onions, a little garlic, seasoning cubes
,salt to taste and a little pepper(optional).
Then we cook it with low heat preferably, until it is soft enough for a fork to pierce through.
Then we remove the chicken from the stock and keep it in another bowl.
Next:
We rinse our white rice with clean water and parboil for about 6 minutes(max.). Then we drain the water and keep it in a clean bowl and set aside.
Since we would be using satchet tomato paste,
we empty it into a clean bowl and add a little water to dissolve it(see picture above).
Then we put a previously rinsed dry pot on our cooker(gas cooker/stove-i'm using a stove)and your the vegetable oil into the pot and heat it up with low heat still.
Then we carefully add our already drained chicken to the hot oil and fry. We fry it till it's golden brown(for that party chicken taste) and remove from the oil and keep it in a sieve to drain the oil
Now jollor give proper!:
We add drop some chopped onions and fry it slightly for 1minute.
Then we add our chopped green bell pepper and fry slightly for that extra party flavour, taste and aroma😋
Then we add our dissolved tomatoe paste (or blended tomatoes) and fry gently.
Until it is properly fried(remember with low heat) and the tastes well fried and looks like this⬇️
Now we season our fried tomato with 1 chicken stock cube, curry, a pinch of nutmeg, thyme, salt to taste , grounded dry pepper(atagingun) and crayfish. Then leave it to simmer on low heat.
Then we add our chicken stock and two more chicken stock cubes and add a little water just enough to cook the rice⬇️
Then we cover the pot and wait for it to boil for two minutes before we add our parboiled rice.
Now we add the parboiled rice to the pot without stirring. Taste it to check if it needs a little salt(remember to be light on the salt).
Then we cover the pot and leave it to cook on lot heat until the water dries.
Then we taste the rice to check if the rice is completely soft, but if isn't we sprinkle a little water(remember not to stir) and cover the pot.
Finally, we add the our green beans and cover the pot for 2 minutes to simmer.⬇️
Then we stir the vegetables into the jollof rice with a wooden spoon to avoid it from getting unnecessarily burnt and allow the rice dry completely and looks like this⬇️
Finally!💃, we turn off the heat and serve our jollof rice with our fried chicken😁😋👌.
