Oatmeal cookies with chocolate cream. Without a plate!
What is your favorite cookie recipe? After traveling and relaxing from a blender and a plate, I always enjoy returning to my kitchen to my favorite salads, smoothies, side dishes and desserts. In this recipe for oatmeal cookies, a stove is not needed - just a blender and a fridge.
Chocolate Oatmeal Cookies
(20-24 pieces)
- 1 cup of pitted dates
- 1 cup oatmeal
- 1/2 cup pasta made from nuts or seeds
- 1 tbsp. spoon of chia seeds (optional)
- a pinch of salt
- a pinch of cinnamon
For chocolate cream:
- 3 tsp coconut oil
- 1 tbsp. spoon of maple syrup or girasol syrup
- 3 tsp cocoa
Date and oatmeal mix ten times in a blender, so that they are crushed and formed a sticky dough. Add the nut paste, chia, salt and cinnamon and mix again in a blender. If the dough is too dry, add a little water or coconut oil and mix again.
Put parchment paper on the plate, form small balls of the finished dough. Using a fork, level to the desired shape of cookies and refrigerate for an hour or night.
In a small bowl, mix coconut oil, syrup and cocoa. Dip each cooled cookie in half into the finished cream, again lay out on a plate and put in the refrigerator so that the cream will freeze. Before serving, store cookies in the fridge.
